Traditional Pinchos

  • Cut your favorite protein (chicken, beef, fish, pork, tofu, etc.) into cubes.
  • Skewer the cubes and grill to preference.
  • While grilling, baste the cubes with Paco's Pincho Sauce.
  • Baste twice or to taste while cooking.


Marinade

  • Marinate chicken, beef, fish, pork, tofu, or vegetables whole or cut into cubes.  Marinate in a container or self-sealing plastic bag.  Freezer grade bags work best.
  • Marinate for 2 to 4 hours.  For maximum flavor marinate for 1 day.  Always refrigerate food while marinating.
  • Discard sauce used while marinating.
  • Grill to preference.
  • After browning, baste 1 or 2 times with fresh sauce for maximum flavoring.


Chicken Wings

  • Marinate whole or cut chicken wings in a container or self-sealing plastic bag.  Freezer grade bags work best.
  • Marinade for 2 or more hours.  For maximum flavor marinate for 1 day.  Always refrigerate food while marinating.
  • Discard sauce used while marinating.
  • Grill till wings are golden brown with a crisp skin.
  • After browning, baste 1 or 2 times with fresh sauce for maximum flavoring.
